| Step One
Cut one large zucchini lengthwise and scoop out the seeds down the middle with a spoon, or ice cream scoop.
Preheat your oven to 350 F

Step Two
Dice your favourite veggies in a mixing bowl, this time we used onion, garlic, tomato and yellow pepper.
(Next time I would add in the tomato after smooshing everything together)

We used fresh lean ground beef from the grocery store. One could also use bison, chicken, elk, pork, fish... or any kind of fresh meat.
we seasoned the meat with ground black pepper and ground sage.

wash your hands and mix it all together... then wash your hands again.

we used a left over curry sauce from a previous dinner, but one could use any number of sauces to add some flavour to this recipe.
Put that zuke in the oven.
Stuffed Zucchini Meat Loaf will be ready when the meat is cooked and the zucchini is cooked all the way through.

Step Six
Place the zucchini on a solid cutting board and get ready tp cut and serve
we served it up with whole-berry saskatoon jam, mmm
